Not hard really .. just time consuming.. Cut as much grissle out as possible including the big one that runs through the breast. I cut the breast into 3 strips with the grain of the meat, it just seems to work out that way when removing the grissles, I also remove the scriffing (tiny white transparent covering on the outside of the breast meat) it takes a real sharp knife to do this properly. Cut those three strips against the grain of the meat into thick slices or as close to slices as possible. Then Hammer those out into nice thin tenderized slices like seen in the first pick. I season with Seasoned flour, but General Purpose flour with salt and pepper is good too (no need to dip in egg but you can if you like that). Then fry in mixture of Olive Oil and Butter. I get a steam pot hot and ready with Chicken Broth .. and when one pan is fried move into the steam pot, until all is fried up and steamed. The steaming is a just something I like.. seems to melt in your mouth to me.. but some people prefer it crunchy right out of the pan and not steamed..
