As I said before in an email that may have gotten erased at your house
....
Option one: Caroline county recipe
cube up goose meat (0.5" cubes or so), lightly cover in olive oil, powder with old bay or some variation of old bay, then cook in large skillet, but do not over cook- do alittle more than brown it or whatever you are comfortable with. You can mix in some onions or sliced green peppers if you feel like it, then serve over wild rice or something. I also like it with Cuscus or whatever that stuff is called.
option two: Crock pot, fix like beef, add beef boulion cubes or some beef broth and small red potatoes and stuff like that. Turns out decent.
Option 3: slice it up like an accordian (sp?) and marinate like london broil, cook slow on grill with bacon. I like it with some overcooked mushrooms served over top.
Just some ideas........
