I'm ashamed to admit I'm in the 99% the author speaks of in this article. However, the next long beard I can get my hands on will be getting his legs and thighs slow cooked in the crock-pot. Try it out everyone. http://www.buckmasters.com/videos/tips-all.aspx

I am one of the 1% I guess. I cut the leg and thigh off as one, skin it and freeze it. Then when I am ready for some turkey soup or chili I pull out a leg/thigh and throw it in a stock pot. I then put 6-8 peppercorns, 3 stalks of celery, 3 carrots, 1 onion, some other herbs and kosher salt and make homemade stock. Good eats

We have always saved legs, thighs and wings. Turkey salad, dumplin's, soup!

Made some Sunday night! Got the left overs in the fridge to be taken down tomorrow night!

Keep the dark meat.

That barbecue recipe sounds good. I have been making a stir fry out of the thigh, leg, and wing meat which turns out pretty good. It is necessary to spend a lot of time trimming the meat away from the tendons and gristle for best results with the stir fry.
